Mathania chilli is a traditional variety from Rajasthan, famous for its rich red color, moderate heat, and strong aroma. It is widely used in Indian cuisine for both taste and natural coloring. This desi variety grows well in warm climates and is suitable for cultivation across India during summer, monsoon, and early winter seasons.
Start by sowing the seeds in nursery trays or small pots. Sow them half an inch deep in well-drained soil and keep the trays in partial shade. Germination takes 8 to 12 days. Once seedlings reach 4 to 5 inches in height with 4 to 6 true leaves, transplant them into grow bags or garden beds with a spacing of 18 to 24 inches.
Select a location with full sunlight and fertile soil. Water regularly and apply organic manure every 15 to 20 days. Plants begin flowering in 50 to 60 days, and harvesting can begin around 80 to 100 days after transplanting. Harvest when the chillies are fully red and dry them in shade for long-term storage or grinding.
